Welcome to Future Fermentation, the festival of fermentation that celebrates the art, science, and culture of fermentation! This unique event will bring together industry experts, traditional and innovative producers, artists, scientists, and fermentation enthusiasts from Ticino and beyond. It promises a complete immersion into a new approach to food, aimed at promoting well-being for people and the environment, with the ambitious motto "New paths to good food."
Rediscovering Fermentation: A Millennial Heritage
- Fermentation, often associated with beer and wine, is much more than that. Bread, vegetables, and other foods undergo transformation and preservation thanks to the action of microorganisms largely unknown to the general public. This practice has traversed centuries of history, becoming not only a gastronomic aspect but also a science, a culture, an art, and even a philosophy. The first edition of the Giornate della Fermentazione focuses on the social aspect and the exchange of ideas and cultures.
An Experience Beyond Flavors: The World of Fermentation Within Reach
- The Giornate della Fermentazione will be an unmissable opportunity for enthusiasts and the curious. During the event, participants can taste and purchase a wide range of fermented products, not only from Ticino but also from other Swiss cantons and various European nations. Courses, symposiums, and round tables with experts and researchers in the field will provide valuable information and techniques for producing healthy and delicious foods.
Tapas Roulette Menu: A Burst of Flavors in the Citadel of Fermentation
- The beating heart of the Giornate della Fermentazione is the Circular Market, divided into two distinct rings. In the "Central" section, producers specializing in traditional and spontaneous ferments will delight visitors with a variety of fermented products. In the second ring, called "Friends of Fermentation," other producers will complete the culinary offering. At the center of it all will be chef Alessandro Atzori and his collaborators Riccardo Astolfi and Erica Botticchio, renowned experts in the field of fermentation, who will coordinate the unique culinary experience of the "Tapas Roulette Menu." This creative selection of tapas will make tasting engaging and captivating, and the synergy between producers and enthusiasts will create a vibrant and interactive atmosphere.

- "The Magic of Koji: Tradition and Innovation" by Nina & Manuel (Semper Vivum Fermenti)
- An enchanting journey to discover Koji, from ancient origins to modern applications. With Nina and Manuel as guides, you will learn the cultivation techniques of this microorganism and its incredible possibilities. The course lasts about 3 hours and is open to 12 participants. Cost: 100.- CHF per person, materials included. Languages: Italian, English, German.
- "Beyond Blond and Red: The World of Beer" by Fabio Colombo (Arbant Beer)
An unmissable experience for beer lovers. You will discover the secrets of different beer styles, production processes, and sensory characteristics. The course lasts about 2 hours and is open to 12 participants. Cost: 85.- CHF per person. Languages: Italian, English.
- "Fermented Sauces: Surprising Tastes" by Caterina Ratti (Tavola Calma) and Mattia Jurietti (Fermenticino)
Explore the magical world of fermented sauces. You will learn fermentation techniques and create spicy, sweet and sour, and classic sauces. The course lasts 3 hours and is open to 15 participants. Cost: 110.- CHF per person, materials included. Languages: Italian, French upon request. Each participant will be able to take home a fermenting sauce.
